Le dessert avait un gout de Québec ce soir-là . À l’occasion d’un souper entre amis, Coudu a voulu s’essayer à la figure de proue de la cuisine locale, le sirop d’érable.
Après une visite sur le site des Banlieusardises, Coudu a décidé d’accompagner un classique de la cuisine française avec le célèbre sirop d’arbre canadien.
La rencontre des deux cultures s’est faite autour de:
- 6 jaunes d’oeufs
- 60 g de sucre d’érable granulé => remplacé par du sucre de canne
- 1 c. à thé d’extrait de vanille
- 180 ml lait
- 70 ml de sirop d’érable
- 500 mL de crème 35% à cuisson
- 1 c. à thé de fécule de maïs
- Sucre d’érable (pour la caramélisation) => remplacé par du sucre de canne
Au final, ces crèmes avaient un parfum exquis (si, si!). Elles furent dévorées en moins de deux. Seul bémol à cette belle expérience culinaire, il manquait le craquant du caramel sur le dessus de la crème.
Le four a fait fondre le sucre de canne qui recouvrait le dessert lacté. Mais il manquait l’outil adéquat pour réussir la caramélisation. Pour un Noël comblé, Coudu n’a plus qu’à recevoir un chalumeau.
PS: la maman de Coudu lui a expliqué qu’il fallait préparer le caramel à part. Faire fondre du sucre dans une petite casserole en ajoutant un peu d’eau.
Moi j’ai eu un chalumeau pour Noël (pour faire soit la crème brulée soit la plomberie)!
